THAT IS LIVED THROUGH NARRATIVES AND STORIES WOVEN AND EMBROIDERED AS FINE THREADS OF THE FLAVORS OF MEXICO’S traditional cuisine and cultural legacy, CREATING A SYNERGY BETWEEN ART AND NATIONAL CUISINE.

Our team is inclusive, diverse and enthusiastic, in constant training and learning, as in the old workshops of great artists. That is why in Filigrana the stroke, the brushstroke, the color and the texture reach unforgettable culminating moments, creating a virtuous circle between our collectors of dishes, cooks, artists, artisans, the dining room and bar team.

Filigrana is located inside the Cauduro building, a space that houses the protagonism of an extraordinary mural entitled The Condominium. A privileged place where the eyes and gastronomy are masterfully intertwined.

GASTRONOMIC

Filigrana’s gastronomic proposal is divided into moments, as a collection of dishes that create an emotional connection between the palate and the gastronomic symphony. These moments include breakfast, lunch, dinner, the Sunday proposal, as well as an interesting cocktail bar, to finish off with a sweet experience that finely weaves the flavors of Mexico.

In addition, our special menus, which evoke Mexican moments and concepts translated to the palate, represent a constant evolution. For the Filigrana team, these narratives represent a creative display of temporary taste exhibitions.

They are also innovative and interesting menus that refer to the synergy of flavors and colors of Mexico through the concept we eat color.

HIGH CONTRAST AND BEAUTIFUL AND EXCLUSIVE TABLEWARE CONCEIVED BY artisans and artists UNDER THE STRICT VISUAL CURATORSHIP OF CHEF MARTHA ORTIZ.

TRADITIONAL MEXICAN BAKERY

We rescued the tradition and lineage of the traditional Mexican bakery and drew with the graphics of great international artists our now famous art-conchas. This mural of flavors is accompanied by prickly pear and xoconostle pinwheels, piloncillo pig-shaped cookies, walnut chinos, traditional donuts (donas de peltre) and those sprinkled with sugar and Damask roses, among other delicacies.

MARTHA ORTIZ

Martha Ortiz, a pioneer and visionary in the creation of Mexican concepts brought up to date, is in charge of curating the flavors and taste, and passionately outlines her role as mentor and creative director of this multidisciplinary gastronomic space. Martha is very fond of being Mexican and loves the craftsmanship, filigree and magnanimous flavors of Mexico.

Her career has not only developed in gastronomy. She has also been an activist, philanthropist, author and editorialist, always in favor of women and their inclusion as key protagonists.

Among the concepts that Chef Martha has conceived and developed are Águila y Sol, Dulce Patria y Ella Canta. These restaurants and their author have received multiple awards, both national and international.

THE ART OF FILIGREE IN MEXICO FLOURISHED DURING THE COLONIAL PERIOD AND THE ARTISANS GAVE IT THE UNIQUE CHARACTER AND PERSONALITY THAT HAVE MADE IT AN EMBLEM OF SKILL AND REFINEMENT IN MEXICO. IN OUR RESTAURANT, WE HAVE BORROWED THIS WORD TO DESCRIBE OUR BRILLIANT MESTIZO CUISINE, A CIRCLE OF LIGHT AND FLAVOR IN OUR DISHES.
